They’re closed on Mondays, but Tuesdays offer sausage and chorizo burritos, Wednesday is steak and bacon, Thursday features pulled pork with potato and ham, Friday goes back to steak and chorizo, and Saturday rounds things out with sausage and bacon.

Vegans, I didn’t forget about you. Fort Collins Food Co-Op has one of the best vegan breakfast burritos in NoCo, no question.
Located right in the heart of FoCo, this longtime staple (formerly known as the Mountain Avenue Market) has been around since the ’70s, when CSU students first got it going.
Inside the Food Co-op, there’s a deli that offers organic and locally sourced dishes, including two vegan burritos. The classic is packed with Just Egg, Jack & Annie’s vegan sausage, potatoes, onion, bell pepper, spinach, tomato, and Violife vegan cheese. This family-owned restaurant has quietly built a reputation as one of the best places around for a solid breakfast burrito, and it’s easy to see why once you step inside. It’s relaxed, welcoming, and always filled with regulars.
Their breakfast burritos are one of their biggest hits, and a reason people keep coming back. You’ve got your choice of 10 different proteins, with bacon and carne asada being the clear favorites. Everything gets wrapped up with the classics and paired with their green chile, which is hard to beat.

Josie’s Tacos

Josie’s Tacos, right on Longmont’s Main Street, is a go-to spot any time of day, but you’re here for the breakfast burritos, so let’s get into it.
They’re served from open (7:30 a.m.) until 11 a.m., and each one comes loaded with the classics: eggs, potatoes, cheese, and green chile. From there, you’ve got 11 (yes—11!) different options, including a smothered burrito, a chimichanga, a vegetarian option, and “Josie’s Favorite,” which uniquely and deliciously mixes tomato and cream cheese amongst the essentials.
You can also choose from four different salsas, ranging from a mild red to a creamy red with more heat. It’s worth trying one, or a couple, especially if you like experimenting with some extra spice.
