Taste a bite of Peru at one of these eateries in Las Vegas serving authentic ceviche for less than $30.

Ceviche is the national dish of Peru, but you can enjoy it at authentic Peruvian restaurants throughout the Las Vegas Valley.

While Latin American countries—including Chile, Colombia, Costa Rica, Ecuador, El Salvador, Guatemala, Honduras, Mexico, Nicaragua, and Panama—have native iterations of this delicious fish dish, the seafood appetizer originally dates back 2,000 years to Peru’s Pacific coast. First marinated in acidic fruit juices, it evolved with the introduction of Spanish limes, followed by immigration from Japan in the 19th century.

Traditional Peruvian ceviche is made with white seawater fish, cured in a marinade of lime juice mixed with sliced onions, chili peppers, salt, and the fish’s juice, then served with corn and sweet potato. The marinade, known as leche de tigre or “tiger’s milk,” is considered a traditional hangover cure.

As South America’s third-largest country, Peru has a diverse culinary scene, reflecting a mixture of Indigenous, Spanish, African, and Asian influences. Its capital city, Lima, is considered a global culinary destination.

Along with finding ceviche in Las Vegas, some other signature dishes you might expect to find at a local Peruvian restaurant include lomo saltado (stir-fried beef), pollo a la brasa (rotisserie chicken), aji de gallina (chicken stew), causa (mashed yellow potatoes seasoned with lime juice and yellow chili pepper), anticuchos (skewered meat), and arroz con mariscos (rice cooked with seafood).
