Denton’s Insurgent trades wheels for walls with Dallas Farmers Market debut

Denton’s popular food truck Insurgent is setting up a permanent spot at the Dallas Farmers Market. The store opens on October 27.

For Gabby and Sam Lopez, running their successful food truck Insurgent has already been a dream come true. The duo from Denton combined their love of cooking with a unique approach to the business by creating menus filled with dishes that draw inspiration from several different cuisines all at once. 

Now, they’re taking their venture to the next level by setting up a permanent spot at the Dallas Farmers Market. Located at 920 S. Hardwood St., Ste. 174, Insurgent will take everything that customers loved about the original trailer and expand it into a physical storefront. Joining them in the expansion will be Alec Sanders, an executive sous chef equally committed to carrying out the Lopezes’ vision. 

In a release marking the exciting announcement, the couple wrote, “Since day one, we knew the trailer was just a stepping stone. We’ve always kept an eye out for a bigger space to grow into. So when the opportunity came, the Dallas Farmers Market was a no brainer. We’re very excited to be exposed to new guests, meet more farmers and ranchers, and showcase menu ideas we’ve never been able to do in a food truck setting.”

Those menus will officially be announced at a later date—and we’ll go over some of the rumored details with you below—but essentially the Insurgent team wants to use local ingredients and their Culinary Institute of America training to put together new dishes. Given the breadth of choices available at the Dallas Farmers Market, it’s safe to say they’re going to be serving some delicious seasonal meals for a long time to come.

Insurgent will offer tastings, reservations, and more

With Insurgent’s expansion into a physical space at The Market comes some additional changes. The business plans to host after-hours supper clubs and counter tastings with its trio of chefs, as well as reservation-only dinners. The team is hopeful this will also build a sense of connection for people eating at Insurgent who will be able to share more dishes and try new things together.

In terms of what they’ll actually be plating up, we’ll all have to wait on bated breath for that, but the Lopezes assured fans that select items like their Koji Fried Chicken Sandwich will be available no matter where they are. Beyond that, they want to focus on working with local producers and growers, like Tree Folk Farm, Brushy Creek Farm, TX Fungus, Winona Orchard, and Sapling Farm to emphasize the Texas experience.

The couple said, “There’s a shift happening in the culinary world where chefs and guests are valuing stories and experiences over luxury ingredients and white tablecloths. We want everyone from all walks of life to feel welcome while also finding new creative ways to showcase Texas grown ingredients.”

Insurgent’s new location officially opens on October 27, but the team said they’re going to run pop-up events in their food truck for those who are still seeking that specific experience from them. Additional details on the Dallas Farmers Market store opening will be provided on Instagram as they become available.
